11th International Symposium on «Delivery of Functionality in Complex Food Systems» 2025 – Deadline has been extended to 8 July 2025

We are delighted by the interest shown by many investigators and students around the world in attending the next 11th International Symposium on ‘Delivery of Functionality in Complex Food Systems’, to be held in Santiago (Chile) from 5 to 7 November 2025.

As previously mentioned, this symposium will provide a unique platform to present and discuss the latest advancements in food science, focusing on the following topics:
- Designing complex colloidal systems for delivery (bigels, aerogels, emulgels, emulsions, and foams).
- Modulating the functionality of food matrices using emerging and novel technologies.
- Oral processing, digestion, tribology, and rheology: Interdisciplinary insights into food behavior and functionality.
- Designing novel food structures for the delivery of functionality.
- Recent advances in plant-based foods.
Our speakers line up includes: Elke Scholten (NL), Pedro Bouchon (CL), Raffaele Mezzenga (CH), Amparo Tarrega (ES), Alejandra Acevedo-Fani (NZ), Alejandro Marangoni (CA), Antonio Vicente (PT) and Job Ubbink (US).
